Ingredients
- 2 large eggs
- ½ cup extra virgin olive oil
- ⅓ cup buttermilk
- ½ cup caster sugar
- ½ cup maple syrup
- 2 overripe medium bananas, mashed
- 1 ½ cup plain flour
- 1 tsp baking powder
- 1 cup walnuts, roughly chopped, lightly toasted
Method
Step 1
Preheat oven to 180°C. Grease and line with baking paper your Sunday Bake 24cm Loaf Pan.
Step 2
In a mixing bowl, whisk together eggs, oil, buttermilk, sugar and maple syrup. Add bananas and stir well.
Step 3
Sift flour and baking powder into another bowl, add the banana mixture and gently stir to combine.
Step 4
Fold through walnuts. Carefully transfer the mixture into the Sunday Bake loaf pan.
Step 5
Bake at 180°C for 50-60 minutes. Allow to cool 10 minutes before turning onto wire rack.
Step 6
Slice and serve on your fav salt&pepper platter with too much butter!
