Cherry, Goat Cheese and Walnut Salad

  • 1 packet (200-250g) of rocket
  • 1 heaping cup of pitted cherries
  • ¾ cup of walnuts
  • 100g goat’s cheese
  • Extra virgin olive oil
  • Red wine vinegar
  • Sea salt
  • Pepper


Step 1
Preheat oven to 180°C fan forced.

Step 2
Add pitted cherries to a lined baking tray. Place in oven and roast for 10 minutes. Set roasted cherries aside while you prepare rocket leaves.

Step 3
Place rocket into the Shimmy Serving Bowl and drizzle with extra virgin olive oil, red wine vinegar and sea salt. Massage rocket leaves together to combine and soften.

Step 4
Top your rocket leaves with walnuts, roasted cherries and sprinkle with goat’s cheese. Add some of the cherry juice from the roasting pan over the top.

Step 5
If there cherry juice is sticky and stuck to the pan, loosen it with a little warm water then drizzle over.

Step 6
Serve and enjoy.
