Chilli Stir-Fried Vegetables

Anyone else add chilli flakes to almost everything? Well, here is the stir fry for you. In just 10 minutes you will be savouring those juicy mouthfuls of bok choy...

Ingredients

  • 2 bunches bok choy, leaves separated and based removed
  • 1 red capsicum, seeded and sliced
  • 1 yellow capsicum, seeded and sliced
  • 8 baby corn ears, halved length ways
  • 2 cloves garlic, crushed
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • ½ tsp chilli flakes
  • Salt
  • Pepper

Method

Step 1
Heat olive oil in a Con-ium Fry Pan over a medium-high heat.

Step 2
Once hot, add garlic, vegetables, and chilli flakes. Stir fry for 4-5minutes or until vegetables cooked and greens have wilted.

Step 3
Add soy sauce to pan and season with salt and pepper. Stir-fry for a further minute, and remove from heat.

Step 4
Serve and enjoy!
