Ricotta Hotcakes with Mouth-Watering Maple Bacon

  • 8 streaks of maple bacon
  • 240g ricotta cheese
  • ¼ cup finely grated Grana Padano
  • 1 ½ tbsp of maple syrup
  • ½ tsp salt
  • ½ cup of milk
  • 2 separated free range eggs
  • 60g butter
  • 85g self-raising flour
  • Your choice of tomato relish


Step 1
Heat oil in Re-lite Fry Pan 30cm until bottom is coated, add maple bacon to pan.

Step 2
Remove maple bacon from Re-lite Fry Pan once the bacon has started to become golden brown.

Step 3
Combine the ricotta, Grana Padano, milk and egg yolks into a large salt&pepper bowl. Sift over the self-raising flour and add a ½ teaspoon of salt. Stir until combined. Whisk the egg whites in a separate bowl to soft peaks. Fold through a third of batter initially before adding the remainder.

Step 4
Heat 30g of the butter in a Re-lite Fry Pan 30cm over medium heat. Add ¼ cup of batter at a time to the pan and cook each side until golden. Repeat steps until all the batter is cooked.

Step 5
Assemble the hotcakes on our Industry Dinner Plates. Serve with your favourite tomato relish and maple bacon on the side.
