Ingredients
Dressing- ¼ cup soy sauce
- ¼ cup rice vinegar
- ¼ cup olive oil
- A dash of sesame oil
- ¼ cup sugar
- 1 tsp minced garlic
- Pinch of pepper
Salad
- 2 tbsp olive oil
- 400g fioretto cauliflower
- 1 cup edamame beans
- 90g soba noodles
- Black or white sesame seeds
- 2 sprigs of mint
- Salt
- Pepper
Method
Step 1
Preheat the oven to 220°C. Grease Amana Rectangle Baking Dish with 1 tbsp of olive oil.
Step 2
Place fioretto cauliflower into baker and roast in the preheated oven for 20 minutes.
Step 3
Meanwhile, bring pot of water to boil and cook soba noodles for 5 minutes. Once noodles have softened, rinse and drain well. Put aside.
Step 4
Place soy sauce, rice vinegar, olive oil, sugar, sesame oil, minced garlic and pepper into an empty jar. Close the lid of jar securely and shake until sugar is dissolved. Put aside.
Step 5
After 20 minutes of roasting, add edamame beans to the baker. Drizzle with the remaining Tbsp of olive oil and roast for another 10 minutes.
Step 6
Remove from oven. Add sober noodles to baker and season with salt and pepper. Pick mint leaves from the sprigs and garnish on top along with a pinch of sesame seeds.
Step 7
Pour dressing over dish and serve straight from the stark baker onto your plate. Enjoy!
