Ingredients
- 1 whole cauliflower
- 1.5kg of potatoes
- 2 Bulbs of garlic
- ½ cup of slivered almonds
- 3 sprigs of rosemary
- 3 sprigs of lemon thyme
- 3 sprigs of mint
- 2 lemons
- Olive oil
- Salt
- Pepper
Turmeric Yoghurt
- 1 cup of Greek yoghurt
- 1 tbsp of olive Oil
- ½ lemon
- 2 Roasted garlic cloves
- ½ tbsp ground cumin
- ½ tbsp ground turmeric
- 1 tsp of honey
- Salt
- Pepper
Method
Step 1
Preheat the oven to 200°C. Remove stalk and leaves from cauliflower and place into Forte-IQ Roaster.
Step 2
Cut potatoes, garlic and lemons in half. Squeeze ½ lemon over cauliflower. Place vegetables and lemon into the Forte-IQ Roaster around the cauliflower.
Step 3
Drizzle olive oil over all and season with salt and pepper. Break rosemary and lemon thyme into pieces and sprinkle over the dish.
Step 4
Place into the oven for 35 minutes until the cauliflower is golden and potatoes are soft.
Step 5
Sauce: Combine all ingredients in a small bowl and season with salt and pepper.
Step 6
Roast slivered almonds in a small frying pan until golden then put to the side.
Step 7
Remove roasted vegetables from the oven and top cauliflower with turmeric yoghurt. Garnish with mint and slivered almonds and serve in Forte-IQ Roaster onto table.
